The flavor of this bread is really good. It’s so simple and so nutritious, it could easily turn into a requested snack or part of dinner!
The recipe again, only altered now with more experience:
1 1/2 cups teff flour
1 1/2 cups water
Let sit in covered bowl for 24 hours.
Then add:
1/2 tsp baking powder
1/2 tsp Real salt
Stir and pour about 1/2 cup into skillet, cover with a lid and let steam about 4 minutes. Don’t flip, just steam.
Remove from pan and keep cooking until your batter is gone.
Eat these just like this or with honey and butter or use as a wrap for a savory meat dish or curry or whatever. Experiment and have fun!

Mmm… looks tasty and simple! Where do you buy your teff grains and what do you use to grind them into flour? I have not experimented much with other grains besides wheat so I am nervous and intrigued at trying something like this. Thank you for sharing!
Hey Heather! No need to be nervous, you will love this journey in expanding your knowledge and use of different grains. And you’ll be great with it all. ; )
You can get teff on vitacost.com or at the Good Earth and or I’d guess possibly Sprouts too. Bob’s Red Mill sells it whole and also in bags of already ground flour. I don’t usually buy flour, but if that’s my option or as soon as I grind the grains, I store it in the freezer to keep it as stable as possible. To grind these small grains, I use a little coffee mill I bought at WalMart for about $12. It’s a Hamilton Beach, called “Custom Grind.” You can grind any grain in these, really quickly and you can change the texture easily too. I’ve used mine to make oatmeal flour and millet flour and teff flour and flax meal etc.
Your question makes me think of answering the question many people have, which is, why bother using different grains…stay tuned, I’ll post my take on that here soon!
I would love to hear that post! I am trying to branch out our breakfast grains of oatmeal and 9-grain cereal, but I am not sure where to start. Haha, but now that I am past the nausea stage of pregnancy I am ready to try some new ones!! Thanks Jacque, keep up the good work!!
