1/2 c. brown rice, cooked
1 tomato, diced
1/2 c. squash, cooked
1 can black olives
1 c. kidney beans
3 green onions, chopped
1 garlic clove
1/4 c. olive or avocado oil
1 Tbs. agave or honey
1/2-1 tsp. cumin
Combine rice, beans, tomato, squash, olive and onions in a bowl. Stir together dressing of oil, garlic, agave or honey and cumin. Pour over vegetables, and serve with tortilla chips.
Notes:
~You can use any of the orange squashes in this dish, (banana, acorn, butternut, Hubbard, etc.) They’ll have subtly differing tastes, but any would work well. And, if you have eaters that aren’t generally too adventurous, cutting the squash into fine pieces may help.
~You could also use granulated garlic (1/4 tsp. per clove of garlic) if you’re short on time.
