A few weeks ago, a dear friend shared a new dressing recipe with me that I thought you might like to try!
I’m going to call it Melissa’s Best Italian Dressing.
1/2 cup avocado oil
1/4 cup red or white wine vinegar
2 tsp honey
2 Tbs Parmesan (no need to grate it first, as it will be broken up in the blender)
few drops lemon juice
1/4 tsp salt
3/4 tsp basil (I used fresh and that was good)
1/8 tsp oregano
dash black pepper
Put all ingredients into a blender, pulse and voila! You have a creamy, delicious salad dressing or marinate. I used it to marinate these cucumbers and they were so good.

P.P.S. A good idea was passed along to me on this recipe: someone added half an avocado! Doesn’t that sound creamy and nice? I also have been experimenting with adding fresh chives, garlic, apple cider vinegar and Pecorino Romano cheese in place of the Parmesan. So, so good!
