Note: I just came across this old post and had to share again! I haven’t made this dessert in awhile and I thought it might be just what we need on a cold winter day!—
Oh my sisters! I’m excited to share my new recipe with you. If you like sticky rice desserts, I think you will want to try this one!
Tonight, we were having this Sweet Potato Curry Soup and this Thai Peanut Salad for dinner, so I wanted to have a little sweet bite for dessert that would stay in the fresh food flavor arena.
I’m not a mango fan (I know, I wish I were!), but I did have fresh pineapple on hand. Ginger came to mind because my mouth has been watering since I recently saw three fresh ginger dishes made on a Japanese cooking show.
It’s nice too that pineapple contains bromelain, an enzyme that fights inflammation and both ginger and pineapple are great digestive aids! So this simple recipe turns out to be a flavor-popping dessert with virtues!
Pineapple & Ginger Sticky Rice
Equipment
- saucepan
Ingredients
- 1/4 cup fresh minced ginger (the larger the pieces, the bigger the kick!)
- 1/4-1/3 cup honey
- 1/8 tsp salt
- 1 cup rice
- 2 cups water + 1/8 cup pineapple juice
- 1/4 cup fresh pineapple finely chopped
Instructions
- In a saucepan combine: rice, pineapple juice, and fresh pineapple.
- Cook together, covered (about 25-30 minutes) until rice is tender.
- Remove from heat and stir in: minced ginger, honey, and salt.
- Cover again and let sit for five or ten minutes before serving. This rice is good eaten warm or cold!
Cooking for a family is a privilege, in part, because it’s one opportunity to make our love, not only visible, but delightful, tangible and nourishing too.
