Oh my sisters! I’m excited to share this new recipe with you. If you like sticky rice desserts, I think you may want to try this out!
I’m not a mango fan (I know, I wish I were!), but I did have fresh pineapple on hand. Ginger came to mind because my mouth has been watering since I recently saw three fresh ginger dishes made on a Japanese cooking show.
It’s nice too that pineapple contains bromelain, an enzyme that fights inflammation and both ginger and pineapple are great digestive aids! So this simple recipe turns out to be a flavor-popping dessert with virtues!
In a saucepan combine:
1 cup rice
2 cups water + 1/8 cup pineapple juice
1/4 cup fresh pineapple, finely chopped
Cook together, covered (about 25-30 minutes) until rice is tender.
Remove from heat and stir in:
1/4 cup fresh, minced ginger (the larger the pieces, the bigger the kick!)
1/4-1/3 cup honey
1/8 tsp salt
Cover again and let sit for five or ten minutes before serving. This rice is good eaten warm or cold!
