This salad was a hit!

We used a mix of greens, topped with:

Fuji apple, diced
Fresh blueberries
Red onion, finely sliced
Sprouts
Cucumbers, peeled and diced
Poppyseed dressing

We usually have a bowl of greens, that have been washed and torn into bite-sized pieces and are ready to eat, in the fridge with a tight fitting lid. Then, when I ‘m ready to make salad, that prep work is already done! And because it takes less time this way, we’re much more likely to prepare and eat fresh food each day.

I also like a lot of variety when it comes to salads, and I dislike soggy cucumbers or tomatoes ruining a whole bowl of greens if they sit in the fridge together!
